JONES, Technical Innovation Center, McCormick & Co., Inc., 204 Wight Ave., Hunt Valley, MD 21031 Trends and Product Development…. two worlds that need to function as one but which often conflict. “What good does it do me to hear about ‘far out' trends when my customers keep asking for the same predictable products?” McCormick faced the task of making sure the trends hit the pavement after their release of Flavor Trend Report 2000. Analysis of gap and creation of constantly evolving living models produce a platform from which both can co-mingle successfully. This presentation discusses some of these models, how they are alive, growing and linked to 2005 flavor trends. It is the story of how a food scientist, “foodie”, has been able to bridge the gap to create food products that are not only on-trend but applicable in today's food industry environment.
