NOVATION® Prima: The functional native starch with premium stability

A. ZELAYA and A. M. Merk. Customer Solutions and Product Innovation, National Starch Food Innovation, 10 Finderne Ave., Bridgewater, NJ 08807

A functional native starch with premium stability can help food formulators develop products to meet consumer needs for convenient, natural/clean labeled, great-tasting, quality foods. NOVATION® Prima starch is part of a range of functionally native starches. These starches, produced with a patented technology, are distinctly different from any other starch on the market. They are not chemically modified, but they possess all the functionality of traditional modified starches and can be simply labelled according to their base starch; that is, Corn Starch. They also have the added benefit of a clean flavor release that has been confirmed with an independent sensory firm. NOVATION® Prima starch has these features plus the additional benefits of premium stability. This new, functional, native starch finds application in natural, clean-labeled, frozen food applications. Additionally, this product is useful in foods that require long or refrigerated shelf-life and foods that have a complex distribution channel. Now, for the first time, you can prepare high-quality, natural, clean-labeled foods that can withstand the rigors of chilled and frozen distribution encountered in the global food industry today. Data to demonstrate the process tolerance, clean flavor release, and stability features in food applications will be presented. Testing of formulae and processes representing a range of different food applications will be presented to illustrate the process tolerance. Consumer taste-test results will demonstrate the clean flavor release. Stability testing in applications will show significantly improved stability over native waxy maize starch and comparable stability to traditionally modified food starch.
