MORIWAKI, Fundamental Research Division, San-Ei Gen F.F.I., Inc, 1-1-11, Sanwa-cho, Toyonaka, Osaka, 561-8588, Japan Enzymatically Modified Isoquercitrin (EMIQ) is the world's first commercial water-soluble flavonol glycoside produced by enzymatic treatment. It consists of alpha-glycosyl isoquercitrin obtained by the glycosylation of rutin from which rhamnose has been enzymatically removed. EMIQ is more than 1000 times as soluble as rutin in water. Rutin, a type of flavonol contained in various kinds of vegetables such as onion, broccoli, grape, wine, and so forth, has a strong flavor- and color-stabilizing ability due to absorbance of ultraviolet rays and radical scavenging activity. However, this compound is highly insoluble in water. In order to improve the solubility, EMIQ is produced by the method shown in Fig.1. Rutin ® Isoquercitrin ® EMIQ Fig.1—Manufacturing Process. In Japan the EMIQ preparation SANMELINTM has been used since 1987 in beverages and foods to prevent flavor and color deterioration caused by light irradiation. Flavors and colors in beverages and foods deteriorate in sunlight or fluorescent lighting in 24 hr convenience stores. However, the addition of SANMELINTM inhibits the deterioration of flavors and suppresses the formation of off-flavors. SANMELINTM also prevents color deterioration in foods and beverages containing various pigments such as carotenoids, anthocyanins, anthraquinons, and synthetic colors. In the USA, EMIQ was approved as FEMA GRAS (Flavor and Extract Manufacturers Association Generally Recognized as Safe) in October 2003. Since then, we have been promoting SANMELINTM AO-3000, an EMIQ preparation which can be used in a number of food and beverage applications such as soft drinks, soft candy, chewing gum, frozen dairy, gelatins, pudding, and so forth in the USA. The safety of EMIQ has been proven by a combined two-year toxicity/carcinogenicity study.
