Bertona St., Seattle, WA 98199-1934 The requirements for allowing new process technologies to be applied differ significantly between countries. The consequence is that the food industry is hesitant to introduce new technologies. The objective of the regulations, however, are the same: to protect the consumer. Although new technologies may offer improved quality, in particular with respect to nutritive value, introduction may be hampered unless legislation is harmonized, eliminating uncertainties and reducing costs. Several processes will be discussed and examples will be given of significant differences in requirements between several countries.
