MILLER, Consultant, 9104 Fieldcrest Walk, Covington, GA 30014 This presentation takes the key aspects of HACCP, most notably the Critical Control Points (CCP's) and the Control Points (CP's) in the Process Flow diagram, and merges them with the process, packaging, and utility Preventative Maintenance (PM) requirements. In it a simple matrix comprising of the CCP, CP, and rest of the plant dealing with food safety, employee safety, and equipment that has the greatest downtime cost. Issues that must be taken into account are that CP and CCP's are sequenced from raw materials to finished product, one specific CP/ CCP may involve more than one piece of equipment, and that one piece of utility equipment can cover more than one CP/ CCP. Integration is constant as the plant upgrades their process, packaging, and utility equipment, creating changes in both the plant's HACCP Program and its PM program.
