COLETTA, Product Nutrition, Sara Lee Bakery, 8400 Maryland Ave., Saint Louis, MO 63105-3668 The 2005 Dietary Guidelines Advisory Committee recommended that Americans consume at least 3 or more servings of whole grain foods each day and decrease their intake of refined grains. In addition, the Committee emphasized the need to increase intake of shortfall nutrients including folate, fiber and calcium. The Committee also recognized that high risk groups may need substantially more vitamin D than the current recommended intake. Throughout the report, the Committee noted consumers must have variety and flexibility to achieve nutritional adequacy and energy balance, some people will increase their consumption of whole grain food, like whole wheat bread, while reducing their consumption of non-whole grain breads which are enriched with folate. This could have an impact on fiber and micronutrient consumption. The assumption for this study is that offering a wider array of whole grain foods, like breads, that are also fortified at a similar level of folate recommended in 1996 by the FDA for enriched bread, rolls and buns, along with moderate levels of fiber, calcium, and vitamin D can be a cost effective approach to help consumers: (1) Meet the recommended intake of whole grains; (2) Address their shortfall nutrients; and (3) Prevent unanticipated consequences (i.e., a decrease in folate intake as they transition from refined, enriched grains to whole grains). This presentation will summarize the findings from three large government datasets: NHANES 1999 – 2002; USDA National Nutrient Database; and the USDA Pyramid Survey Database that were utilized to validate these assumptions. Dietary adequacy by consuming levels of whole grain bread with the proposed fortificants relative to age gender groups outlined in the Dietary Reference Intakes process will be presented.
