A. BLUM, Symrise, Inc., 300 North St., Teterboro, NJ 07608 Flavors based on citrus fruits are extremely popular throughout the world. An astounding percentage (over 50%) of commercially manufactured beverage products rely on flavors derived from citrus fruits. There are many publications and reports dedicated to specific data on citrus juice production and consumption, but information on the byproducts used in flavoring beverages seems to be much more difficult to find. There will be many new challenges to citrus flavor manufacturing in the future. Beverage manufacturers are requiring improved stability and functionality to support their supply chain issues, agricultural residues present new sourcing and analytical problems, and pressures exerted by Mother Nature will continue to cause product quality and cost variations in the marketplace. A sound understanding of the underpinnings of this important industry will be essential in the years to come.
