S. M. BARROS, W. S. Stinson, and T. Flannery. Research and Development, Florida Dept. of Citrus, 700 Experiment Station Rd., Lake Alfred, FL 33850-2243 It has been shown, through demographic analysis of grapefruit juice consumers, that the typical consumer is an older individual and that there exists a large opportunity for increased grapefruit juice consumption among the younger generation. In order to get a better understanding of what a younger consumer prefers in a 100% grapefruit juice or 100% grapefruit juice blend, a series of tests were conducted utilizing elementary and middle school kids. In one study, kids were asked to evaluate a “gold standard” grapefruit juice and two grapefruit juice/fruit juice blends. In another study, a comparative test of canned and chilled grapefruit juice from concentrate was conducted as well to determine whether school kids could discriminate between USDA grapefruit juice flavor grades. The results from these tests showed that elementary and middle school students will drink a high-quality grapefruit juice and, more importantly, would try the product again. Perhaps one of the most interesting results from our studies are the major differences between girls and boys for the taste liking and overall liking of grapefruit juice.
