Reduced carbohydrates-analytical and labeling issues

The Carbohydrate Paradigm: From Roughage to Net Carbs. As consumers seek effective means to control their weight and consequently improve their odds of enjoying improved health and longevity, they pursue a variety of dietary options. Currently one of the options being actively pursued consists of restricting the carbohydrates in the diet, with special emphasis on restricting glycemic carbohydrates. Accurately quantitating glycemic carbohydrates (such as starch and sugars) from non-glycemic carbohydrates (such a dietary fiber and sugar alcohols)is essential for accurate food label information. Analytically this is especially challenging as the scientific understanding and consensus of the constituent makeup of dietary fiber has evolved since the first Official Method of Analysis for Dietary Fiber in Foods (AOAC 985.29) was studied, validated, and adopted in the early 1980's. Additional Official Methods have been adopted as the knowledge has evolved. The impact and challenges of the accurate quantitation of the various carbohydrate fractions in foods will be discussed.
