Obesity and low carbohydrate foods

Adults and children in the U.S. and other countries are getting fatter and fatter. Concomitant problems such as type 2 diabetes are increasing at alarming rates, straining the resources of health care systems and insurance providers. Sedentary lifestyles appear to have a synergistic interaction with dietary factors in exacerbating the obesity epidemic. Inadequate research and confusing squabbles among biological scientists, behavioral experts, health care providers and media pundits have hindered consumers' and policy makers' understanding of obesity issues and their ability to take an evidence based approach to corrective action. This presentation will address two major questions: 1) how did we get to this point, and 2) how can food technologists help turn this around?
