Several critical factors need to be identified before the best stabilizer system can be selected for your product. Conditions in the formulation such as pH, available water, and competing ingredients such as sugar affect hydrocolloid selection. Processing conditions relating to the amount of shear available, how much heat will be applied, whether or not the product will be frozen, or if the intended shelf life is short or extended will need to be addressed. Consumer end-use will also play a role in ingredient selection. Knowing these details will help to prevent lumping, incomplete activation, or loss in effectiveness of your hydrocolloid over time. Once all parameters have been identified, it is essential to select the appropriate hydrocolloid for each characteristic you desire. Thickening agents such as guar gum and locust bean gum can provide significant viscosity, mouthfeel, and freeze/ thaw stability at low usage levels. Gelling agents such as sodium alginate and methylcellulose impart exceptional protection against bake-out of fillings during processing or end use applications. Emulsification of fats in bakery fillings can be achieved through the use of gum arabic or propylene glycol alginate (PGA). Xanthan gum promotes stability under the most extreme conditions of heat and pH. Modified cellulose products provide excellent rheological characteristics, increased mouthfeel, and extended shelf stability of your filling. In order to create appealing products that will be able to withstand industrial processing and extended shelf life scenarios, it is essential to properly manage the physical and chemical characteristics of the formulation. Purposeful use of gums can make formulation of fillings a successful endeavor.
