PASUPULETI, SAI International Inc., 1436 Fargo Blvd., Geneva, IL 60134 The objective of this short presentation is to give an introduction of protein hydrolysates/bioactive peptides in nutraceuticals and functional foods. This will lead to other speakers to deliver their respective presentations specific to the symposium title addressing stress management, obesity, blood pressure, sports drinks/muscle recovery. Generic manufacturing overview of protein hydrolysates/bioactive peptides will be presented highlighting the recent trends. Protein hydrolysates/bioactive peptides are an excellent nutritional source providing di, tri and oliogpeptides and amino acids which exerts specific physiological functions in the body. For example, cardiovascular, stress management, obesity, muscle recovery after intensive exercise, osteoarthritis, immune defense system and digestion and absorption of specific minerals. Few examples of protein hydrolysates/bioactive peptides used as ingredients in nutraceuitcals and functional foods will be presented.
