(1) Chemistry-Biology Department, University of Sonora, Retorno Catalinas Poniente 26, Residencial Catalinas, Hermosillo, Son., 83145, Mexico This paper presents the treatment of the wastes generated in the food technology laboratories of the University of Sonora in one scholar year. Around 92 (89.8L) different wastes were generated from academic laboratory practices done by the food technology students. They were classified according to their characteristics in corrosives, toxic-corrosives, and flammable-toxics. The wastes were treated by the food technology students under the supervision of the Environmental Health and Safety Program of the University of Sonora (PISSA-UNISON). The students applied physical and chemical methods to reduce their volume or dangerousness, to pour them in the drain safely, or to recover them. 66 wastes could be treated (79.09 L), 103.88 g of salts and 10.87 L of organic solvents were recovered. The achievement of this work contributed to introduce the environmental and safety culture in the food technology students through their academic laboratory practices, to avoid the pollution of the environment, to diminish costs from the management of the wastes and to avoid penalties by environmental authorities.
