Research & Development, TIC Gums, Inc., 4609 Richlynn Dr., Belcamp, MD 21017 A new product, modified gum acacia, named Ticamulsion 2010 has been developed by TIC GUMS, Inc. under US Patent No.6,455,512.It has been recently granted GRAS approval. The chemical name of the emulsifying product is gum acacia octenyl-butanedioate, which is derived by the chemical modification of the natural polysaccharide extracted from Acacia species. The modified gum acacia exhibits enhanced emulsifying properties and may be used as a replacement for modified,emulsifying starches at 1/2 the level required.The oil-in-water beverage emulsions were prepared with Ticamulsion 2010; homogenized at 2500/500 psi in a two-stage APV homogenizer and evaluated using an Elzone 3850 Particle size analyser. When used in spraydried flavors, Ticamulsion also yielded excellent protection against oxidation. It was also evaluated in a UHT-treated dairy beverage and compared to a gum system containing propylene glycol alginate. Results show that the modified gum acacia yields stable emulsions, given the optimum conditions required.It offers a non-GMO and low-cost alternative to the food and beverage manufacturer.
