A food safety educational program was developed for food recovery agency personnel in the Lower Mississippi Delta. Examples of topics were personal hygiene, food storage, transporting food safely and HACCP. Pre- and post-surveys (20 questions) were identical, and validity and reliability were established prior to use. Paired t-tests were performed to determine the effectiveness of the curriculum (n=107). A behavior survey (10 questions), demonstrating attitudes and behaviors regarding food safety practices in the agency and/or the home, was given with the post-survey. The heading on the behavior survey was “After the food safety training today I plan to”; and possible responses were “already doing, yes or no.” Post-survey scores (18.9±.2) were significantly (p<0.000) greater than pre-survey scores (16.6±.3). Behavior survey results indicated that subjects were already doing proper food safety practices (6.1±.3), or that they planned to practice proper food safety practices (3.7±.3). Results demonstrate the food safety educational program improved food safety knowledge. In addition, behavior survey results indicated that the majority of food recovery agency personnel are already practicing proper food safety practices in their agency or at home.
