None the less it is considered the gold standard and provides several important functions in foods and beverages in addition to sweetness. This presentation will discuss the numerous functions of sucrose, the challenges faced when replacing sucrose with alternative sweeteners - i.e., the low-calorie sweeteners, acesulfame potassium, aspartame, neotame, saccharin and sucralose, and/or the polyols, and how these challenges may be addressed.
