LUDESCHER, Dept. of Food Science, Rutgers, The State Univ. of New Jersey, 65 Dudley Rd., New Brunswick, NJ 08901-8520 Seed proteins, due to their importance as foods and feeds, have been the focus of analytical investigations using chemical, biochemical, and biophysical techniques for nearly two hundred years. Despite this extensive history, much about the structure and dynamics of many important seed proteins remains unexplored. This brief survey will outline the biophysical analysis of seed proteins using primarily spectroscopic techniques and will summarize current knowledge of the three dimensional structure, molecular dynamics, and solution properties of the important classes of seed proteins. Particular emphasis will be placed on what remains to be discovered about the relations between structure, function, and dynamics in these protein classes.
