After over ten years of effort, the U.S. Department of Agriculture established its National Organic Program (NOP) under the oversight of the Department's Agricultural Marketing Service. The NOP established national production and handling standards for agricultural products seeking to be sold, labeled or represented as organic. This presentation will provide an overview of the NOP by discussing the standards, their acceptance within the food industry and implications for food technologists.
