Search and select: Finding your ideal outsource partner

B. S. JACKSON, Food Processing Center, Univ. of Nebraska, Lincoln, Dept. of Food Science & Technology, 143 Food Industry Complex, Lincoln, NE 68583-0919

Before searching for a custom processor or contract manufacturer, a company should consider the most important criteria that fit their specific needs for service. For each product to be processed, a process flow diagram should be completed that details equipment needs, process parameters, packaging specifications and line capacity requirements. Location should also be considered-are raw ingredients easily available or are there distribution constraints to limit search areas for potential contract manufacturers?

Some thought should be given on rating potential processors in terms of track record/reputation, physical condition of facilities, quality assurance procedures, certifications, USDA/ FDA inspections, as well as safety records. Expectations, both short and long term production goals should be developed. Decisions should be made to layout the raw ingredient and final product inventory ownership. Check the company’s website-is it up to date, easy to access and gives out real time information. If confidentiality is important, be ready with legal questions and documents.

To find potential contract manufacturers for products, companies should look to their trade associations and trade publications. Networking with equipment dealers, ingredient and packaging suppliers can often provide information on contract manufacturers. Check with private consultants and university organizations for referrals or to act as confidential liaison if a company wants their search to remain confidential.
