Overweight and obesity in the U.S.

The burgeoning obesity problem in the USA will be outlined with emphasis on some food-based solutions that have been posed by recent summits on obesity including the IFT Obesity Summit in 2004. Food-based solutions are critical as the food industry needs to be part of the solution. Dairy foods and some of its unique components may be particularly useful as part of the solution. For instance, the satiating effect of a number of milk’s low-fat proteins, the specific effects of some of the proteins in whey, and the metabolic effects of calcium will be introduced. Strategies for harnessing these along with a number of dairy-based solutions for dealing with this very difficult problem will be suggested.
