Adocloud CL-100: Unique cloudy emulsion derived from citrus components only |

Cloudy emulsions are well known to the beverages industry. The emulsions are added to citrus drinks to improve opacity, consistency and rheological properties. Emulsions are unstable thermodynamically and need emulsifiers to improve their stability. Most cloudy emulsions are based on weighting agents (SAIB, resin gums, ester gums etc.), emulsifiers (Lecithin, Sorbitan esters, gum Arabic) and additives (colorants, antioxidants, preservatives). Only a very limited number of natural occurring materials, that impart good cloudy and stability properties to the final drink are permitted. Many attempts to produce clouding agents from citrus peels and juice have been reported. Most of them are unsatisfactory due to poor cloud and cloud stability, or bitterness and off taste resulting from peel constituents. Adocloud CL-100, presents a new effort to design and prepare a well balanced product, based on concentrated aqueous extract of citrus clouding components. New technology is applied to selectively separate the natural clouding constituents present in the citrus peel. This technology overcomes problems encountered with “older generations” of the natural solutions practiced in the beverage industry, which were based on peel extracts. The product is defined as "clean-label" and does not contain any emulsifiers, weighting agents or additives. Moreover, no raw materials other than citrus matter are utilized. The product is free from any off flavors and bitterness in a wide range of usage levels, while imparting high cloudy appearance and cloud stability. Typical characteristics are: Cloud: Absorbance of 0.630 OD (at 1:500 dilution, 580nm), in comparison to 0.170 OD measured for cloud produced from peel extract and essential oil. Cloud stability: Deterioration of less than 10% of the cloud in pasteurized bottles during storage for 12 weeks, in comparison to 65% reduction for cloud produced from peel extract. Comparative data on the application and performance of Adocloud CL 100 in soft drinks will be presented.
