An FDA food allergen update |

FALCI, Center for Food Safety & Applied Nutrition, U.S. Food & Drug Administration, 330 C St. S.W., 1054-C HHSS, HFS-700, Washington, DC 20204 Over the past three years FDA has increased its efforts to reduce the unfortunate occurrence of undeclared food allergens. The problem of product carryover from shared equipment remains an issue about which the food industry must continually be vigilant. Besides cross-contact, issues concerning ELISA test kits, inspections, and food allergen thresholds are of most concern this year. Aspects surrounding the use of processing aids that have low levels of allergenic proteins will be discussed as well as other late breaking regulation and policy news.
