Development and delivery of distance food science courses

J. CHOW, Department of Food Science, University of Guelph, Guelph, ON N1G2W1, Canada

The Certificate in Food Science program at the University of Guelph consists of 5 credit courses in introductory food science, food chemistry, food microbiology, food processing, and food analysis. All courses in the program are delivered via distance education. Each course utilizes printed materials and a designated course website. Some courses also include multimedia resources (i.e., compact disks, videotapes).

The distance education format allows flexible scheduling which is advantageous to individuals employed full-time or who have other personal responsibilities. Many students are currently employed in the food industry, yet seek formal academic training in food science.

The Certificate program is offered in partnership between the Department of Food Science and the Office of Open Learning. Teaching is undertaken by faculty and graduate student tutors. The Office of Open Learning assists in program administration, instructional design, and provides technical expertise in website management and development. A program co-ordinator shares teaching and administrative responsibilities while acting as a liaison between the two departments.
